Maple Taffy on Snow
At our Blue Mountain location in Collingwood we offer maple taffy on snow. As evidenced by the enthusiasm of this young skier, kids and adults alike absolutely love it. We are often asked if this maple recipe can be duplicated at home. It most certainly can be. Follow the instructions below and wow your friends at home with this traditional maple sugar shack recipe.
 
1. The maple syrup must be 100% pure and not processed like many of the maple syrups you would purchase at the grocery store. Pour into a deep stainless steel pot and bring to a boil slowly. Using a candy thermometer, moniter the temperature of the syrup. You must bring it to a temperature of 232 degrees fahrenheit before it is ready to pour.  Be patient this takes time.
 
2. Before pouring, you must ensure that the snow is packed down extremely well. You will then want to pour water over the snow and have it freeze so that you have a frozen surface. At our Blue Mountain store, we are fortunate enough to have an ice making machine that we use for the surface on which we pour the maple syrup.
 
3. Pour the Maple syrup onto the frozer surface and place a popsicle stick at one end.
4. Leave the Maple syrup on the ice for a minimum of 25 seconds allowing for the syrup to freeze.
 
 
 
5. After 25 - 30 seconds begin rolling slowly by pressing down on the popsicle stick while rolling.
 
 
 
 
 
6. Hopefully this is the artful creation you will end up with. Experiment, enjoy and have a great time devouring your maple taffy popsicle.
