Minus Eight Canada is world renowned for both the quality and quantity of it's ice wine particularly in the Niagara region where the micro climate is very condusive to its production. Niagara has rapidly attained a reputation for the quality of it's ice wine and connoisseurs the world over lust after the much sought after delicacy. In 2006 the most expensive bottle of ice wine producedin Niagara-on-the-Lake was purchased for a mere $30,000.00 CAD. Natural ice wines require a hard freeze (a minimum of minus 8 Celsius) to occur sometime after the grapes are ripe, which means that the grapes may hang on the vine for several months following the normal harvest. If a freeze does not come quickly enough, the grapes may rot and the crop will be lost. If the freeze is too severe, no juice can be extracted. As a result, supply can be limited.
